BROCCOLI AND BARLEY SOUP

Both barley and broccoli,the two key ingredients in this soup,have a low Glycemic Index rating. This helps keep the blood glucose and insulin levels stable,thereby preventing insulin resistance and obesity which may worsen PCOS symptoms. In addition, broccoli provides one of the best dairy-free sources of calcium.

Preparation Time:10-15 minutes

Ingredients:
1/4 cup onion,chopped
1 carrot,small peeled and diced
1 rib organic celery,finely chopped
1 tbsp extra virgin olive oil
4 cups small,organic broccoli florets,small
1/2 cup pearled barley, cooked
5 cups vegetable broth
2 tomatoes,blanched and chopped
4 cloves garlic,minced
1/4 tsp dried marjoram
1 tsp thyme
Salt and pepper

Preparation Method:

1-Ina stock pot,cook onion in olive oil over medium heat for 4-5 minutes until soft.

2-Add vegetable broth and bring to a boil. reduce to a simmer and add celery and carrots along with broccoli florets.cover and let simmer until carrots and broccoli florets are tender.

3-Add cooked barley, chopped tomatoes, garlic,marjoram,and thyme. Let simmer another minute or two.

4-Season with salt and pepper. Serve warm.
